Sautéed Zucchini

Ingredients

Instructions

1. Wash, clean, and slice the zucchini to a few millimeters thickness (I use a mandoline slicer).

 
 

2. In a non-stick frying pan, heat-up the oil and Novella’s Little Veggies (or 1 clove of garlic) over medium-low heat for 2 minutes. 

 
 

3. Add the zucchini and cook over medium-low heat for 5 minutes, mixing gently every couple of minutes. 

 
 

4. Add the broth and cook over medium to low heat for 30 minutes or until the broth has evaporated and the zucchini have started browning. Mix gently every 5 minutes. 

 
 

5. While the zucchini are cooking, chop the parsley.

6. When the zucchini are cooked, add the parsley and mix gently.

7. Enjoy!
