Keto Chicken Pizza Crust

This is my new go-to base for a keto pizza! Both husband and step-son love it and I can’t wait to prepare it for my parents when I’m back home for the holidays!
Beyond being delicious, this base is also very filling, so I try to make it as thin as possible (just a few millimeters). The ingredients here are enough for either 2 small pizzas or 1 bigger one.
Note, the recipe calls for Parmigiano Reggiano, not Parmesan. The former is more expensive, but the flavor is very different. Depending on how much you want to spend, you can use either one.
Ingredients

Ground chicken breast, 500 g (~ 1 lb)
Mozzarella, either fresh (I use Belgioioso) or shredded, 100 g (3.5 oz)
Parmigiano reggiano, 30 g (1 oz)
Dry oregano, 1/2 tsp
Salt, 1/4 tsp
Pepper, 1/4 tsp
Garlic powder, 1/4 tsp
Egg, 1
Possible toppings:
Mozzarella
Pesto
Mortadella

I use either 2 baking sheets 11x11 inches or bigger, or 1 17.5 x 11 inches big
Instructions
1. Preheat the oven to 400 F and line a baking sheet (or 2, depending on how many pizzas you’re making) with parchment paper.
2. Cut the mozzarella in small pieces and grate the parmigiano cheese.
3. Add all the ingredients to a bowl and mix well.
4. Move the mixture to the baking sheet (or split it between 2 sheets for 2 pizzas) lined with parchment paper, then cover the mixture with another sheet of parchment paper, and press it with your hands to a thickness of a few millimeters.
5. Remove the top layer of parchment paper, and bake at 400 F for 25 minutes.
6. Add the toppings and bake for another 5 minutes.
7. Enjoy!
