Keto Mascarpone Cream with Berries

Gluten free, grain free, nut free, peanut free, soy free. Keto, vegetarian, low carb.

Servings: 2 cups, 4 small glasses

This cream is super simple and, yet, SO YUMMY!

It is the same base cream you would use for tiramisù, albeit some people might add coffee, liquors, or chocolate chips. I like it simple, often paired with berries, but I can see many fruits going great with it.

For best consistency, I make it ahead of time (typically the night before) and refrigerate it for a few hours before serving it.

If your diet allows it, feel free to replace 40 g of erythritol with 30 g of regular sugar and to use your favorite fruit.

  • Mascarpone (I normally use Belgioioso), 230 g (8oz)

  • Erythritol, 2 heaping tbsp (40 g, 1.25 oz)

  • Eggs, 2 separated

  • Blackberries, blueberries, or your favorite fruit, 150g (6 oz)

Instructions

1. Take the mascarpone out of the fridge and prepare 4 small glasses (each glass is for 1/2 cup of cream and fruits). 

2. Separate the egg whites from yolks. Add the erythritol to the yolks and beat with an electric mixer until thick and pale yellow.

 

3. Add the mascarpone to the yolks and erythritol mixture and fold it in, mixing gently from bottom to top.

4. In a separate bowl beat the egg whites to firm peaks.

 
 

5. Fold the egg whites into the yolks mixture.

 

6. Move the cream into the piping bag. (I like to prepare the piping bag by placing it inside a big glass and wrapping the edges around the rim of the glass for support).

 

7. Pipe the cream into 4 glasses, layer it with your favorite fruits and refrigerate for a few hours.
