Keto Strawberry or Blueberry Jam

My favorite breakfast of all time? Bread, butter, and jam. When I decide to treat myself for breakfast, I prepare this keto jam and pair it with a couple of slices of sunflower seed bread and butter....it’s like a hug on a plate. You can prepare this jam ahead of time and store it in a jar in the fridge for up to 10 days. It is also a great addition to plain yogurt. 

On my stove this jam is ready in about 40 minutes, but the cooking time may vary depending on the stove. When still hot, the jam is less thick than traditional jam, but it will thicken more while cooling. 

You can also adjust the thickness at the end. For example, if you’d like you jam thicker, you can boil it for longer. If you’d like it thinner, you can re-heat it on the stove and add water to taste, stirring until incorporated.

1. Wash the fruit. If you’re using strawberries, chop them.

 

2. Combine the fruit, erythritol, and water in a saucepan, and bring to a boil.

 

3. When the water is boiling, lower the heat and simmer for 35-40 minutes, or until the fruit breaks apart easily and the jam has thickened. The jam will be less thick than traditional jam, but it will thicken more while cooling. Mix every 10 minutes with a wooden spoon while simmering.

 

4. Turn off the heat and, if using strawberries, add the lemon juice to the jam and mix it.

5. Let cool completely. 

6. If the jam is thinner than you’d like, bring back to a boil for a few minutes to remove some water and then let cool completely. Repeat as needed until the consistency is to your taste. If the jam is too thick, re-heat on the stove and add water to taste, stirring until incorporated. Let cool completely.
