Tomato and Basil Sauce

Here is a quick, simple and delish recipe for tomato sauce! This is my cheaper version of Rao, my favorite ready-to-go sauce.
I love basil, so I use quite a bit of it, but feel free to adjust the amount based on your preference. I also like to use full leaves and then blend the sauce at the end with an immersion blender, but you can of course skip this step and chop the basil instead.
I normally use this sauce for pasta dishes, vegetarian lasagna, or Eggplant Parmigiana.
Ingredients

Extra virgin olive oil, 12 g (1 tbsp)
Onion or shallots, ⅓ cup (50 g, 1.8 oz)
Crushed tomatoes, 400 g (14 oz can)
Salt, 3g (½ tsp)
Erythritol, 1.3 g (½ tsp)
Basil, 10 g (0.3, about ½ cup), or to taste.

Instructions
1. Heat up oil and onions, cook for 3 minutes over medium to low heat
2. Add the tomato sauce, plus ⅓ of a cup of water to clean the can. Mix.
3. Partially cover with a lid (to minimize splatter) and cook on low heat for 10-12 minutes or until the sauce has thickened.
4. Add salt and erythritol, mix and cook for 1 minute.
5. Turn the heat off. Either finely chop the basil and add it to the sauce, or add the basil leaves and blend it with an immersion blender.
6. Enjoy!
Storing and re-heating
You can store this sauce in the fridge for 3-4 days in an airtight container. You can re-heat it on the stove or in a microwave.
