These cookies are delicious on their own, in a keto tiramisù (recipe in preparation), or dipped in milk. If you’re preparing a tiramisù the amounts provided here are enough for an 8 in x 8 in tiramisù.
If you want to use this recipe in other desserts, you can also bake the creamy mixture in a sheet instead of cookies, and cut out whatever shape you’d like.
Ingredients

Super fine almond flour, 65 g (½ cup)
Gluten free baking powder, 2.5 g (½ tsp)
Salt, 1/8 tsp
Eggs, 3
Erythritol, 25 g (2 tbsp)
Cream of tartar, 0.5 g (⅛ tsp)
Vanilla extract, 0.6 g (⅛ tsp)

Instructions
1. Preheat the oven to 180 C (350 F) and line a baking dish with parchment paper.
2. Separate the egg whites from yolks.
3. Add the erythritol to the yolks and beat with an electric mixer until thick and pale yellow. Add the vanilla extract and mix for another minute.
4. In a separate bowl, add the cream of tartar to the egg whites and beat with the electric mixer to firm peaks.
5. Fold the egg whites into the yolks mixture.
6. Mix the almond flour, baking powder, and salt, sift into the egg mixture, and gently fold in.
7. Move the mixture into the piping bag (I prep it by placing it inside a big glass and wrapping the edges around the rim of the glass for support) and create your cookies. Here I make 20 cookies, about 3.5 inch x 1.2 inch each in size, but feel free to vary the size to your liking.
8. Cook for about 15-20 minutes or until golden.
9. Let cool completely.
10. Carefully separate the cookies from the parchment paper. Enjoy!

Storing
You can store these cookies for 3-4 days in an airtight container.
